4 great recipes for you and the family to enjoy this summer

Breakfast:

Banana Pancakes

  • Mash 2 bananas with a fork, until almost smooth
  • In another bowl whisk 3 eggs and add to the banana
  • Add a pinch of cinnamon, a splash of milk will make the mix go further but isn't essential
  • Heat a little oil in a pan
  • Spoon helpings of the batter on to a hot frying pan, rather than pour (otherwise heavier ingredients all get left at the bottom)
  • Keep them quite small and they'll cook the same as thick pancake mix
  • You'll know to flip them when they are no longer sticking to the pan
  • Cook for a minute or so on each side until firm then put to one side
  • Refresh the oil in the pan if necessary and add another dollop of pancake mix
  • Serve with runny honey and a handful of berries

Lunch:

Halloumi Tacos

  • Pre-heat the grill.
  • Quarter a couple of onions and peppers and put on the grill, turning occasionally so they cook evenly.
  • Once the vegetables begin to soften and are blackening in spots, it's time to add the halloumi.
  • Slice the halloumi into approx. 1cm slices, brush with oil to prevent sticking and grill each side for about three minutes, or until grill marks form on the cheese.
  • Remove the cheese & vegetables from the grill and set one side
  • Heat the tortillas over the grill, 15-30 seconds on each side.
  • Build your tacos & enjoy with a cold drink!

Dinner:

Bean Chilli

  • Heat 2 tablespoons of oil in a large, heavy pan over coals or a medium flame
  • Chop an onion or two, and a few cloves of garlic, add them to the pan, and fry until the onions are soft. Keep them moving to prevent sticking.
  • Stir in some smoked paprika (about a teaspoon), a teaspoon of brown sugar and half a teaspoon of chilli powder (more if you prefer a hotter dish) to the peppers.
  • Boil the rice in a saucepan following the pack's instructions
  • When the onions and garlic are cooked, pour in a couple of tins of bean salad or beans of choice (Berlotti, Cannellini and Kidney bean all work great) and a tin of chopped tomatoes. For a really special dish, add a tablespoon of cocoa powder
  • Bring to the boil, then remove from the hottest part of the grill and simmer, taste and season 
  • Once reduced to a simmer, create 4 wells in the beans with the back of a spoon and crack an egg into each one. Cover with a lid and leave for 5-6min or until the whites are firm. 
  • Serve with rice, tortilla chips and sour cream, garnish with fresh chopped coriander

Dessert:

Chocolate Orange Brownies

  • Per person: Combine 4 tblspn each of plain white flour & sugar (golden caster works great), a pinch of salt & 2 tblspn of cocoa in a bowl or jug
  • Add 2 tblspn each of oil or butter & milk (plant milk works too) to the dry ingredients
  • Hollow out a medium orange per person (save the pulp for juice or just eat as is), saving the top as a lid
  • Spoon the mix into the orange
  • Wrap the orange in foil and place in the hot coals of the fire, keeping upright
  • Check after 30min and move around if necessary to ensure they are all cooking evenly
  • After 40-45min in total, remove from heat, open the foil and allow to cool for a few minutes. They should be firm on top but sill gooey in the middle
  • Add peanut butter, chocolate chunks or a pinch of ginger powder to the mix before cooking for an extra treat.
  • Leave out the cocoa but add chocolate chips for a cookie dough style dessert.
